1 pound Spinach-washed well, drained and
chopped into small pieces
salt to taste
1 juice of lemon
1/2 cup vegetable oil
1/2 small minced onion
1/2 cup chopped walnuts
combine dressing ingredients and stir well-this can
be made a day ahead of
time. Pour half of dressing over spinach and toss
well. Salad stays well. Serves 4.
