Shrimp Scampi


Fish

1 lb. raw jumbo shrimp
¼ cup butter or margarine
2 garlic cloves, minced
2 tablespoons fresh lemon juice
Salt and pepper to taste

Wash shrimp; remove shell and
legs, leaving tails attached.
Devein shrimp if desired. Melt
butter in pan and sauté garlic
briefly in butter. Do not brown
butter or garlic. Add shrimp.
Sauté 2 minutes on each side
until shrimp are done. Sprinkle
with salt, pepper and lemon
juice, and remove to warm
plate and serve. Serves 2.
