1 – 1 1/2pound fresh okra, chopped
1 large onion, quartered
1 teas. Mango powder-can be purchased
from an Indian store
2 teas. Ground cumin
2 teas. Ground coriander
1/8-1/4 teas. Red pepper-depending on taste
½ teas. to 1 teas Salt-depending on taste
1 teas. Tumeric
3 Tablespoons veg. Oil
Place okra and onions in pan with oil and sauté for five minutes.
Stir in other ingredients and cook until okra is very tender, typically
25-35 minutes depending on taste. Add additional oil if necessary to prevent okra from burning.
