Flat Bread – Parathas
This can be made in a bread machine or by hand.
2 Cups Wheat Flour-best if bought in Indian store
½ to ¾ Cups Water
½ teas. Anise
Mix ingredients together and kneed in bread machine or
by hand. Add more flour if too wet or more water if too
dry until you get a nice dough. Break off small balls of
dough and roll with rolling pin into a circle. Fold circle in
half and then fold in half again until you get a triangle.
Roll out triangle to regular size. Fry on a griddle in a
little oil or margarine until golden brown on both sides.
Serve with Indian eggs below along with mango or
tamarind chutney bought from Indian store if desired.
Some people like to put butter or margarine on parathas.
Makes about 8 to 10 Parathas.
½ Cup chopped Onion
8 beaten eggs
1 tablespoon chopped fresh coriander (cilantro)
Lightly brown onions in margarine or oil in frying plan.
Mix in eggs and scramble till done.
Salt and pepper to taste. Top with fresh coriander.
Sprinkle with a dash of garam masala if desired. Serves
