Couscous & Feta Salad


Salad

1 1/2 C. Water
4 T. White Vinegar
1 C. Couscous

Bring water and vinegar to boil; remove from heat. Stir in couscous & cover for 5 min. Fluff when water is absorbed. Meanwhile, prepare dressing:

3 T. White Vinegar
3 T. Fresh Lemon Juice
6 T. Peanut or Canola Oil
1 t. Salt
1 T. Fresh Pepper

Whisk together ingredients, or shake in jar. Prepare remaining ingredients:

4 Scallions, minced
1 Cucumber, peeled, seeded, chopped in 1/2″ pieces
1 C fresh Mint Leaves, chopped
4 oz Feta, crumbed

ADD DRESSING AND ABOVE INGREDIENTS TO WARM COUSCOUS
AND LET MERINADE AT ROOM TEMPERATURE FOR 1 HOUR. Just
before serving add:

12 Radishes, very thinly sliced
1 C shelled Pistachios
