Chocolate, Cherry, Oatmeal Cookies

1 cup Butter
¾ cup Sugar
¾ cup Light Brown
Sugar
1 ½ cup Flour
1 teaspoon Baking Soda
1 Egg
1 teaspoon Vanilla
1 ½ cup Oatmeal
1 cup Dried Cherries
1 cup good quality
chopped Chocolate (like Ghiardelli)
1 cup Skors Toffee Bits

Cream butter and both sugars. Combine flour
and baking soda and add to butter. Add egg and
vanilla. Fold in oatmeal, cherries, chocolate and
toffee (dough will be thick). Divide into 3
parts and roll into 2″ wide logs. Store in
plastic wrap and chill. Slice each log into 12
slices.

Bake 350 8-10 minutes (preferably on parchment
or sheet liner). Yield: 3 dozen 3″ cookies
